At the helm, Léo has brought to Bordeaux this well-kept secret from Campania: the panuozzo, a pizza dough puffed up like a pastry, filled on the spot with fresh, seasonal ingredients. The result: a treasure of crisp, fluffy goodness, somewhere between a sandwich and a pizza, that you can enjoy with your fingers.

The menu is intentionally short: five recipes bursting with character starting at €8.90. Two combos with drinks and/or dessert are offered at lunch and dinner. The PAPI mixes mortadella, fior di latte mozzarella, homemade pistachio pesto, arugula, and cherry tomatoes. The PIQ brings the heat of the South with its 'nduja and spicy ciambella. The PV, a veggie alternative, features a truffled artichoke cream and lemon zest. Finally, the PPT melts in your mouth with its stracciatella, herb prosciutto, and truffle cream. A seasonal "special" recipe will spice up the menu, available as panuozzo or salad.

From a Quick Lunch to a Friendly Afterwork
At noon, busy Bordelais rush in to grab a panuozzo to-go or to enjoy on-site in a minimalist and warm setting that mixes raw wood with touches of Bordeaux. In the evening, PAB is also "Boards after work", a friendly spot for afterwork gatherings with friends or colleagues: panuozzi, platters of sliced charcuterie and cheeses, spritz, Italian beers, and a little terrace to soak in the charm of Cours Portal.
With melting mozzarella, golden dough, fresh and artisanal products, it's a chance to bite into a piece of Italy without leaving the Chartrons.
