Signature, the premium street food made in Bordeaux
And it's number 4! After the Quatrième Mur, Maison Nouvelle, and a ravioli counter... The Michelin-starred chef from Bordeaux has just announced the opening of a new spot dedicated to his signature dish since 1996 at the Bordeaux train station plaza.
It's a pop-up created by the young Bordeaux company Kubéko, which specializes in transforming shipping containers into custom professional spaces. This exciting new spot will offer takeout only and will be open from April 3 to September 30, 2026.

A Tasty Pop-Up by Philippe Etchebest
The newest addition to the Etchebest success story will be another Signature Ravioli Counter, like the one that opened in September 2024 on the Allées de Tourny. Chosen by SNCF Gares & Connexions, the project aligns with the goal of modernizing and revitalizing the Bordeaux Saint-Jean station, which hosts millions of travelers each year. « The idea is to offer quality cuisine accessible to everyone, in an iconic transit space », the press release states.

Opening scheduled for early April
The restaurant will be open 7 days a week, from 9:30 AM to 8:30 PM. The star chef will serve his famous ravioli - the house specialty - with all kinds of sauces. Whether savory or sweet ! On the menu : foie gras, vegetarian options, ham and cheese, lemon meringue, or chocolate, plus a complete meal for less than 20€.

To celebrate the opening, 2 exclusive recipes will be offered as a preview: the Paella ravioli and the Speculoos ravioli. They will then be added to the menu at the establishment on Allées de Tourny starting April 7. There’s a special offer for travelers, featuring quick service and dishes inspired by French classics. The goal? To combine culinary excellence with mobility. So you can enjoy tastier moments while waiting at the platform.
