The Novettino adventure begins in Paris, driven by a restaurateur passionate about Italian cuisine. In 2019, he launches this concept of quick dining focused on a single product, named « Novettino » — a nod to the number 9, the address of the first restaurant in the capital. The idea: to bring focaccia back into the spotlight by transforming it into a generous, crunchy sandwich that’s bursting with sunshine.
A focaccia, a thousand ways to enjoy it
Thanks to its success, the brand has expanded and made its way to Bordeaux this spring. The cozy little restaurant, nestled across from the pharmacy des Grands-Hommes, is open for lunch and dinner. Fabien, at the helm of this place, ensures that the spirit of the house continues: fresh products imported from Italy, artisanal focaccia, and a warm welcome.
On the Novettino Bordeaux menu, you’ll find 15 signature recipes and a 16th that you can customize at the counter . Topped with fine charcuterie, creamy cheeses, or pickled vegetables, the focaccias blend simplicity and excellence thanks to products straight from Italian producers.
Among the best-sellers: the "Primavera": tomato, pesto, mozzarella, and prosciutto; the "Vecchio": pistachio pesto, stracciatella, and mortadella; and "Oro Bianco": truffle ricotta, roasted ham, stracciatella, and arugula. All of this for €8.90, with the option to add a homemade dessert (like tiramisu, panna cotta, or strawberry mascarpone cream…) and a drink for just €4 more.

Novettino is on a roll! The brand already has ten locations in France, aims for fifteen by the end of 2025, and has plans for thirty by 2026... What’s the secret to their success?
