After the Fourth Wall, Maison Nouvelle, and Signature, Philippe Etchebest opens his 4th and new restaurant in Bordeaux. Named Le Classique, the restaurant is dedicated to the great fundamentals of French cuisine, offering an experience true to gastronomic traditions and a dining service inspired by the great establishments.


Opening on December 23rd at the heart  of the Saint-Pierre district

Located on Rue du Pas-Saint-Georges, Le Classique springs to life in an iconic spot of old Bordeaux. The restaurant has been designed as a timeless retreat, echoing the traditional establishments of the early 20th century. The overall aim is to create a welcoming atmosphere that is accessible and rooted in the history of the neighborhood.


A menu focused on iconic recipes

In the kitchen, the guiding principle is clear: to offer classic dishes made entirely on-site, using rigorously selected ingredients. Chef Kevin Brousse, who has worked at several Michelin-starred establishments, leads the team. The restaurant features symbolic dishes from the French repertoire: puff pastry soup, roasted meats, dessert carts. This bold choice aims to restore the central role of the “French know-how” that the team proudly advocates.


A Delightfully Orchestrated Dining Service

Le Classique places special importance on service, often modernized at the expense of traditional gestures. The teams led by Maximilien Manfredi and Adrien Helbert are bringing back table-side carving, flambéing, and plating in front of the customer, all in a spirit of passing on and valuing the craft. The dessert cart, a central piece of the experience, enhances this desire to offer a well-structured, precise, and clear service. A new haven for food lovers to discover starting next Tuesday.
