Waku creates the first Ramen with Japanese Wagyu

The places serving the best meat in the world - aka Wagyu beef - are feeling the pinch of their popularity. Just look at Moelleuses et Persillées, the favorite carnivore spot of Bordeaux locals. But who would have thought that our Asian friends would also dive into this delicious topic? It makes total sense, though, since this meat is officially crowned as the best in the world and comes straight from Japan.

So it's only natural that Waku Waku, the Japanese restaurant on rue Saint-Rémi, decided to start this project. In this small yet warm and welcoming counter, the Japanese chefs prepare ramen right in front of the customers. Cozy and intimate, the immersive dining experience (fully decorated with Japanese-themed elements) offers quality street food, crafted with finesse and a high standard of excellence.

The Chicest of All Ramen 

The chef, passionate about Japan and its traditions, brings Japanese cuisine to Bordeaux with a little Western twist. The standout ramen on the menu? The « Waku ramen » made with a pork and chicken broth, noodles, Kagoshima Wagyu beef, and truffle shavings. A little jewel of excellence that you can savor for 29€ per person. This makes it the most expensive ramen in Bordeaux, but also the most exceptional !

Meanwhile, the menu at Waku Waku (like the onomatopoeia that means "yay" in Japanese) highlights Donburi, Yakisoba, traditional dishes, and a variety of ramen. Everything is homemade on-site, from the noodles to the broths, including the gyozas, with no artificial additives or flavor enhancers. The restaurant mainly works with local products like local wheat flour, free-range poultry from Périgord, and pork from the Basque Country.

8 classic or signature ramen recipes are available, ranging from €12 to €29. You can choose from land, sea, and vegetarian options. For the broth, there are 4 tempting choices: slow-cooked pork, poultry, small green crabs, or a vegetarian blend with 7 vegetables and powerful herbs.

An authentic counter full of emotions

Opened in early November, Waku Waku quickly became one of the favorite Asian restaurants in Bordeaux. With 23 cozy seats, this quaint restaurant promises an immediate journey to Japan with tables adorned with traditional tableware, servers dressed in kimonos, high-tech restrooms just like back home, and a purposely quiet atmosphere to hear the chefs at work in their native language. «The ambiance is in the kitchen; this is where the experience truly begins.» the owner shares with us.
