A Young Restaurant Among the Big Names
It opened its doors in December 2024, just a stone's throw from Arcachon beach, in a charmingly named spot called Fleur des Pins. And already, Grégory Colantuono's restaurant is nominated for the prestigious The Fork Awards 2025, which will crown, on December 1st in Marseille, the best restaurant in France among 80 recently opened establishments.
This is a rare accomplishment for such a young place, made possible with the support of a renowned mentor: Stéphane Carrade, a two-star chef from Skiff Club in La Teste-de-Buch.

A Journey Rooted in Local Flavors
Grégory Colantuono is no stranger to the Basin. After starting at La Guérinière and then working alongside Thierry Renou at Patio, he went on to lead the kitchens at P’tit Ju and Bistrot 50, before launching this personal project in the former Cabestan, which he has completely transformed.
In his cozy dining room with 30 seats, he offers a delightful lunch menu at €27 and a tight and seasonal dinner menu, with an average bill around €60 to €70. For the adventurous, a surprise 7-course menu at €75 invites you on a culinary journey without a safety net.

The Pig at the Market: A Lively and Personal Cuisine
Here, everything is homemade, using fresh, local, and seasonal ingredients. Grégory Colantuono doesn’t claim the gastronomic label, but he nurtures a strong identity: that of a heartfelt cuisine, shaped by childhood memories.
His specialty? Pig’s feet and ears, a nod to his mother, who instilled in him a love for generous, popular dishes.

A star in sight… or not
Supported by the public and sponsored by a Michelin-starred chef, the restaurant might just win the Public Grand Prize, which will be awarded on December 1st in Marseille. Voting is open until September 30th on The Fork's website.
But he has no intention of raising prices if they win: “Dining out has become a luxury. We need to maintain accessible options, or we lose the essence of the profession,” explains the chef to Actu Bordeaux.
