Open since September 16 at 1 rue du Manège, Bombée & Briochée is shaking up the rules of traditional bakeries: here, brioche is queen. Sweet, savory, rolled, flaky, or filled, it reinvents itself throughout the day in a bright setting with cream, orange, and blue tones.

In Bordeaux, a bakery exclusively dedicated to brioche
At the origin of the project, Vanille Pourailly, who comes from a family of baker-pastry chefs, imagined a true "briocherie". An idea nurtured by her passion for coffee, particularly after several stays in Colombia where she discovered the product at its source.
At the counter, plain brioche flavored with Madagascar vanilla is sold by the loaf and by weight, just like bread at the bakery. Around it orbit chocolate versions, praline or pink pralines, as well as cinnamon or cardamom rolls, flaky brioches and creations filled with light cream.

The menu isn't meant to stay the same: new recipes are set to appear each month depending on the seasons and special occasions.
From comte brioche to lunch sandwiches
Bombée & Briochée also ventures into savory territory. The bakery notably offers a brioche with 18-month aged comte, brioche tartlets, as well as options designed for lunch. Sandwiches, sold for around 10€, come in several vegetarian recipes, chicken (sourced from the lovely Poulailler d'Augustin next door) or tuna. An ever-changing salad rounds out the menu.
A brunch for 26€ on weekends
On Saturdays and Sundays, brioche also takes center stage at brunch. The formula at 26€; includes a hot beverage, a cold beverage, a dish and a sweet treat. Among the recipes developed by the establishment are notably the tuna melt, the revisited club sandwich and the unmissable French toast.

On the beverage side, the spot champions a genuine specialty coffee approach with beans from L'Alchimiste, prepared by a barista. Matcha, chai and chicory round out the offerings.
A charming new spot in Saint-Seurin
The experience extends to the décor, largely imagined by Vanille and her father. Vintage furniture, custom woodwork and cream and orange tones make up a deliberately bright and warm space, far from overly standardized interiors.
