But did you know that upstairs, a brand new spot has just made its debut? It's called Echo Pessac. Run by the same owners as the sophisticated dining experience downstairs, it surprised the locals last June after a colossal investment of 1 million euros to transform the place.

A Unique Place to Live
With the goal of opening a wine bar where you can come any time from 5 PM to midnight, Echo Pessac stands out as "a simple and epicurean address". Designed as a lively gathering spot open to everyone, this place - with a speakeasy vibe accessible via a hidden staircase - reveals a relaxed and vibrant atmosphere, brought to life by concerts, DJ sets, and wine tastings.
Creative Cocktails and 120 Eclectic Wines
In this new upscale venue - featuring a custom-made wooden counter crafted by the Compagnons du Devoir, black marble flooring, a striking beam, and beautifully illuminated wine cellars along the walls - the charm of the old mingles with modern and contemporary elements. The establishment holds a license to serve a wonderful menu of signature cocktails, local beers, a carefully curated selection of 120 wine bottles, and champagnes.
The wine list, crafted by an expert sommelier, features both French and international wines. “We travel and indulge; that’s the guiding principle,” shares the director with a smile. With starting prices from €25, Echo Pessac celebrates both lesser-known small producers and the most prestigious bottles.
High-quality dishes to share!
To complement its vintage treasures, Echo offers a shared dining experience. Picture exceptional tapas made with gourmet ingredients on a more approachable level; the bar takes pride in crafting modern and creative plates that often give a fresh twist to classic dishes. Don't miss out on the "AOP camembert with Portuguese lemon honey," the "AOP burrata," the "Angus burger" served on fluffy potato bread, the "Aubrac beef tataki," the "crawfish ravioli with coconut/pineapple sauce," the "warm goat cheese canelé with honey," and truffle charcuterie. Expect to pay around 12 euros for each tapas.

A suspended terrace
Enjoy it in the main room - which softens and comes alive as the hours go by, or outside on the 30-seat rooftop. Like a suspended terrace open all year round, Echo is the very first rooftop in Pessac Centre. Bringing joy to residents seeking new, lively spots to hang out!
To complete the picture, it's a family story run by Franck, the owner, and his 3 sons Clément (the sous-chef), Geoffrey (the dining room manager and sommelier), and Elvin (the mixologist, cocktail expert). "Everyone has their natural area of expertise and contributes to growing the business" the owner happily claims, showcasing the friendly and family-oriented spirit of the place.
