In the Bordeaux hotel scene, the Palais Gallien Hotel & Spa stands out as a model of elegance, charm, and privacy. This luxurious 5-star gem, featuring a pool, 28 rooms (some with jacuzzi and private terrace), and a Nuxe spa, also boasts its own restaurant La Table de Montaigne since 2018. Surprise! The restaurant has recently been revamped to enhance its modernity and scope.

A promising collaboration, an ambitious transformation

The new dining concept will now be called Le Cercle de Montaigne, referencing its private and exclusive atmosphere and the city’s famous magistrate. Under the leadership of the talented Chef David Boyer, Meilleur Ouvrier de France, the restaurant continues its legacy by reinterpreting the art of French gastronomy with a focus on sharing and boldness.

Authentic cuisine true to the flavors of French terroir

The former chef from Anne-Sophie Pic, Ledoyen, or Taillevent reinvents the classics of French gastronomy with a contemporary twist and a generous menu. Among the signature dishes: the perfect egg, a tribute to elevated simplicity, the sole meunière reimagined with elegance, the beef rib, a symbol of togetherness, and the coquillettes with Comté and truffle, a delightful reminder of childhood flavors.

A sophisticated cocoon inspired by the private clubs of the 30s

The decor has also been refreshed to embrace a new identity. Influenced by the private clubs of the 1930s, it combines precious woods, soft lighting, black marble, and leather to allow guests to indulge in a cozy and intimate atmospherethat’s perfect for shared moments. But Le Cercle de Montaigne doesn’t just reinvent gastronomy; it celebrates the art of dining. Under the guidance of the Head Sommelier, the menu features signature cocktails like the "Pear & Roses" and the "Tiramisu Martini," along with modern takes on classics like the "Basil Smash" and the "Chocolate Old Fashioned."

Le Cercle de Montaigne embodies the French art of living, where tradition and modernity intertwine in a celebration of elegance. Soon, it will open up to the outside with the installation of its gardens and rooftop. Around the brand-new pool, you'll enjoy a summer cuisine made for sharing. It's an invitation: to gather, to celebrate, to savor, in the heart of a private hotel that blends heritage and modernity.
