The haven for truffle lovers has set up shop in the heart of Halles de Bacalan. Since early March, Balme, the very first truffle bar in Bordeaux, has unpacked its bags there, continuing an adventure that began in Biarritz and has already flourished in about a dozen French cities, from La Baule to Colmar, passing through Nîmes and Poitiers.

A Twist on Everyday Cooking with Truffles
In this new kind of bistro, friendliness and sharing are the key themes. Here, there are no frills or artificial flavors: only the fresh truffle, grown by Uncle Balme — fourth-generation truffle farmers based near Avignon — is allowed to enhance the plates.

On the menu, classic bistronomy dishes reimagined with just the right touch and a dash of boldness. Among the best-sellers are: The Balme-style mimosa egg, crunchy and enhanced with truffle ham, Uncle's Coquillettes, coated in melted comté cheese and truffle white ham, or even The Croque-Martine, topped with a truffle mascarpone cream and crowned with a fried egg. Each dish can be truffle-enhanced on the spot with a grating for an extra (+3€), for an even more delightful experience.
A counter cuisine, homemade and seasonal
The menu, renewed each month, also offers market plates: snacked artichokes, a sauté of cha .Mushrooms, sausage-purée, or even chicken supreme. All are made in-house and beautifully presented on the spot. There's also a snacking offer between 7€ and 10€, allowing you to enjoy a truffle sandwich on the go, all in a relaxed atmosphere.
Balme has 7 seats at the counter, facing a open kitchen where you can see the magic of the dishes being prepared. A showcase displays the house-made products, and the team takes the time to chat with curious guests with the aim of demystifying this noble product, the truffle. The idea? To shine a light on an essential part of our local heritage and make it accessible to as many people as possible.
