The Boulangerie Martin Ricard, located in Pessac, has won with flying colors the eagerly sought-after title of Best Butter Croissant in Gironde 2025, awarded during the annual contest organized by the Federation of Artisan Bakers and Pastry Chefs of Gironde. It took place on February 17th at La Teste-de-Buch, during the Rest’Hôtel fair.

The discerning jury, made up of industry professionals, assessed several quality criteria to determine the winner: weight, baking, quality of the flaky layers, appearance, consistency, as well as flavor and texture of the crumb. This all had to be done following the rule of "presenting 5 identical and pure butter croissants weighing 60 grams each in a neutral container," as shared by our grand winner, with the regulations in hand. And in this delightful competition, it was the bakery Martin Ricard, which opened just 9 months ago in the Pessac-Alouette neighborhood, that stood out!

What’s the secret to its success? A perfect blend of AOP Poitou-Charentes butter, local flour from Moulin du Courneau, eggs, raw milk from a farm in Pessac, salt, sugar, and yeast. “It’s all about the balance and the quality of the ingredients to achieve a crispy flakiness, with just the right amount of butter—not too much—and a visually even layering,” shares the grand champion.

Opened just under a year ago, Boulangerie Martin Ricard has quickly become a must-visit spot in Pessac. With a cozy atmosphere dedicated entirely to baking and pastries, this little gem prioritizes quality above all, offering 100% homemade goods and organic, naturally leavened breads.
