Le Bistrot Le 1544: from the farm to your plate
Within Gabriel, there are 3 different entities, orchestrated by Chef Bertrand Noeureuil: the bar on the ground floor, the bistro Le 1544 on the first floor, and the starred gourmet restaurant L’Observatoire on the second floor. The bistro Le 1544, which we will highlight today, showcases regional cuisine.

It is elaborated around seasonal products from La Ferme 1544, a 9-hectare farm located in Saint-Loubès and self-managed by the house to supply all its establishments with fruits, vegetables, herbs, mushrooms, and poultry. Hence the nickname of the neighborhood bistro, so refined and structured, which makes a point of honoring and highlighting fresh local products.

A regressive, friendly and comforting menu
Its chef Bertrand Noeureuil - named "Grand de Demain 2024" by the Guide Gault & Millau - enjoys offering a more accessible menu, with a market menu starting at €27. The dishes, focused on land & sea, work with traditional products in a twisted version. Examples include: the thin tomato tart, confit tuna and its sorbet, marinated sea bream with citrus and tender vegetables, or the lamb and its vegetable tian to share.

Rooted in the heart of the terroir
Because the uniqueness of the bistro Le 1544 in Bordeaux lies in its menu of dishes to enjoy alone or with others. The restaurant offers a selection of dishes for 2 people ranging from €75 to €95. The ambition? To offer a diverse menu to allow all tastes to find their kingdom, to create and choose the menu they desire. Due to its prime location on the Place de la Bourse, the bistro attracts a clientele of passers-by and tourists. There is therefore a clear intention to address them and introduce them to a reinvented traditional cuisine of the South-West.

Between Reverie and Nature
Designed as an ode to dreams and reverie, the decor features countryside mural frescoes adorned with vineyard landscapes, warm wood paneling, arched windows, and period beams. The indulgent menu thrives in a warm, artistic, and natural atmosphere. Completely revamped a year ago, Le 1544 blends old-world charm with modernity for a harmonious and inspiring result.

With 80 seats inside and 60 on the terrace, Le 1544 also has a cozy private lounge on the third floor for seminars and private events.
