The Halles de Bacalan are getting ready to turn a new page! The Vintage Group, famous for its two eponymous establishments, the Délirium Café, Cornichon, and the Singe Vert, has just officially taken over the former bar Bichette and the pizzeria Romeo, which were previously run by the Faber-Lascombes family.
The opening is anticipated as early as September, if the work schedule goes as planned, and no later than the end of 2026.
A new gathering place to revitalize the Halles
With nearly 800 m² of indoor space and a large terrace open on three sides of the Halles, the project aims to become a true meeting point for the neighborhood. « We want to bring this part of Halles de Bacalan back to life », summarizes Matthieu Gervereau, founder of the Vintage Group. « To create a destination for 30-40 year-olds, families, and local residents. »
Far from being just a festive bar, the place aims to...ra on friendliness and an all-day vibe, with doors opening from noon. Pool tables, café games, a spacious terrace, and a lively event calendar will make up the heart and soul of this new spot.
Local beers and 400 wine selections
On the drinks side, two counters will define the space. The first will be dedicated to craft beers featuring a selection from regional breweries like Azimut in Bordeaux, Gasconha in Pessac, and La Débauche in Angoulême. The second will be a large wine bar offering nearly 400 selections.
« We want to highlight the new wave of Bordeaux agriculture and introduce younger winemakers who deserve to be known », says Matthieu Gervereau. 2 Two events are already scheduled: the Bio'Divin fair in January and a winemakers' showcase in the spring.

The dining offering has been designed to complement that of the Halles Biltoki. On the menu: simple and generous local cuisine, featuring duck breast, homemade fries, sharing platters, and carefully selected local products.

With this takeover, the Bordeaux group is reaching out to a different clientele than its historic establishments. The goal: to make this spot a lively place throughout the week, where people come to enjoy lunch, share a bottle, attend a wine event, or spend time with family.
