A unique Sakagura, between Japan and the Arcachon Basin

Founded in 2024 in Mios, Saké de Bordeaux is the first house in the Gironde dedicated to producing premium saké. Led by Tomoo Oda, a former wine professional turned master brewer, it combines Japanese techniques, organic rice from Camargue, white wine yeasts, and underground water from Arcachon.

The Sakagura can produce up to 75,000 bottles a year, with the ambition of placing sake in the long history of Bordeaux's fermented beverages. Officially opened on November 14, 2025, the brewery becomes a new hotspot for sake lovers and curious visitors, blending ancestral know-how, innovation, and local identity.

High-Level Bicultural Expertise

To create its first blends, Tomoo Oda surrounded himself with two international references: Jean-Jacques Dubourdieu, a key figure in Bordeaux white wines, and Marie Chiba, a Japanese sommelier, Sake Samurai, and owner of the EUREKA! bar. Their guidance has helped bridge the gap between oenological precision and Japanese tradition, giving rise to balanced, elegant, and contemporary sakés.

Three Founding Cuvees

Saké de Bordeaux is launching a range of three initial sakés:

  • Prestige, inspired by white wines, slightly off-dry, fresh, and easy to enjoy;

  • Heritage, true to traditional Japanese style, dry, complex, and deep;

  • Sparkling Sake, crafted using the champagne method, with fine bubbles and bright acidity, perfect as a festive alternative to champagne.

An Artistic and Sensory Inauguration

The inauguration on November 14 brought together professionals, media, and enthusiasts for a celebration that blended tastings, music, and Japanese arts.
The day was highlighted by: a discussion about blends with Tomoo Oda and his two consultants, a live calligraphy performance by artist Maaya Wakasugi, and continuous tastings of the three sakés.

Saké, a Heritage to Rediscover

Fermented between 13 and 15%, often overlooked, saké was added to the UNESCO intangible cultural heritage list in 2024. With Saké de Bordeaux, Gironde joins this global movement of rediscovery and becomes a new playground for this ancient beverage.

In a region where wine has reigned for centuries and where craft breweries are flourishing, the arrival of a Sakagura opens up exciting new possibilities.
Saké de Bordeaux aims to showcase, from Gironde, a drink that is still too little known yet rich in flavors, poetry, and traditions. The journey is just beginning.
