A New Proposal for French Street Food
Haute cuisine meets street food. This fall 2023, the Michelin-starred chef surprises us by opening his new street food spot right in the city center at 8 Cours du 30 Juillet. Tucked between Place des Quinconces and the Opera, Signature is the new pop-up ravioli bar by Philippe Etchebest in Bordeaux, open for lunch and dinner from Monday to Friday.
On the menu? A complete sweet and savory formula, centered around his signature dish: ravioli. Fun fact, Chef at Quatrième Mur has been working on it since 1996. This must-have item is on the menu of all his establishments, in different forms.

Philippe Etchebest's ravioli: the star of the Maison
At Signature Bordeaux, it will be offered in a "signature" version with mushroom ravioli, pan-seared foie gras and creamy mushrooms, or in a "vegetarian" version with a grilled brown mushroom replacing the foie gras. Worked in all kinds of ways, it also appears as a dessert with a chocolate ravioli filled with a well-kept secret ganache. All of this, bathed in a comforting warm sauce.

A Chef Meal on the Go!
This generous ravioli dish is more than enough as a main course (despite some skeptics who quickly change their minds). It is offered for €10 for the veggie option and €12 for the meat option. The lunch set, which includes a sweet/savory ravioli and a small salad, ranges from €15 to €18. Enjoy it on-site (a small terrace with 15 seats), to-go, or through delivery.

With a heart to make his cuisine accessible, the chef Philippe Etchebest adds a new experience to his repertoire. While maintaining the same level of demand for excellence that he is known for. To transform his ravioli into street food mode, all elements have been reimagined to offer a restaurant dish at home: working on the texture of the dough, selecting mushrooms, and adjusting the creaminess.

This new gastronomic proposal is always accompanied by small local producers and with an eco-responsible approach (cutlery and containers are recyclable). Limited quantities and subject to availability.
