The pastry chef Anaëlle Prolongeau, at just 20 years old, confirms this saying by recently opening her first pastry shop at 188 avenue du 14 Juillet, in Talence. With an impressive background and exceptional references - graduate of Ferrandi, former employee of the restaurant of the National Assembly and the Westin Paris Vendôme palace - the dessert prodigy from Neuilly-sur-Seine is bursting with creativity.

Crunchy Cream Puffs and Creative Tiramisus
Her passion for pastry is reflected in her crunchy cream puffs and artisanal tiramisus. On the menu, you'll find 7 varieties of cream puffs with filling, sold at €2.50 each. Indulge in flavors like pistachio-raspberry, coconut-passion fruit, hazelnut, vanilla-praline, coffee, chocolate, or violet. The tiramisu recipes are just as delicious with 5 options featuring coffee, mango-coconut-passion fruit, lemon-milk jam, red fruits-blackcurrant with violet flower, and hazelnut-praline. They are sold in jars for €5.50 each.

Freshly launched, the mistress of the place already admits to having to concoct nearly 1,000 cream puffs per weekend in her workshop to meet all the demands.

Alongside her boutique, you can find her on Wednesdays at the market in Talence Forum, on Saturdays at the market in Mérignac, and on Sundays at the market in Chartrons. With the growth of her company, the young shoot plans to open a downtown boutique in Bordeaux next year.
