Mama Dumpling Bordeaux: A unique concept
Both conceptual and innovative, this new spot in the Saint-Pierre neighborhood brings joy to China lovers. With a menu exclusively dedicated to Asian specialties, Mama Dumpling prepares dumplings (those dumplings called "gyozas" in Japan or "mandoos" in Korea) in the purest of traditions with products of pure lineage.
With the heart set on rediscovering the cuisine of his childhood, Christophe and Willy - the founders - have matured the recipes to bring back the generous flavors of those cooked by his mom throughout his youth.
Chinese dumplings for every taste
The result? Dumplings for every taste, or nearly every. 4 varieties of fillings to choose from with 3 different cooking methods. Currently on the menu, you can find the pork Chinese cabbage version, pork garlic leaves, chicken mushrooms, and vegetarian. In the future, the teams plan to expand the offerings to diversify the experiences. Traditionally made with pork, these dumplings are crafted here to accommodate all dietary preferences, including veggies!
In this delicious Jiaozi - Chinese dumpling - homemade with wheat flour (the recipe will unfortunately remain secret), the filling combines a mix of vegetables (mushrooms, carrots, cabbage, celery, leeks, chives, spring onions) and homemade seasonings (soy sauce, vinegar, homemade spices, sesame oil or the traditional 13 Chinese spices). You can enjoy 10 pieces for €10.90 - which is equivalent to a meal - during the entire launch offer. Some extra options, like "cheesy" for example, can be added. A lunch deal offers 10 dumplings + an appetizer for €13.50.
A typical Hong Kong-style Chinese canteen
In this new Chinese canteen, typical of the small eateries found in Hong Kong, enormous work has been done. Formerly Monsieur Madame, the restaurant has been transformed to create an immersive spot in 1970s China. Chinese vases, recycled family trinkets, gastronomic posters, vintage tiles, and double-sided banquettes (indoor and outdoor) offer a real dive into the land of the dragon.
With a capacity of 45 seats + 8 on the terrace, Mama Dumpling also offers a menu of Chinese specialties. With creative starters like smashed cucumber or marinated coriander and chili gizzard salad, and must-try hot dishes like caramelized pork ribs, chicken leg with potatoes and green pepper, or the famous Mapo tofu with sautéed beef Sichuan-style.
To allow everyone to customize their plate, you can choose the "Mama Taocan composition menu" with 3 options from all varieties and a bowl of rice for €13.50 per person.
